Clever Dripper

Immersion + filter hybrid with a valve. Body of immersion, clarity of a filter.

How the Clever works

The Clever Dripper is a cone with a valve at the bottom: closed, it is an immersion vessel; set it on a mug and the valve opens, draining the coffee through a paper filter. You get the best of both worlds — the stable, technique-free extraction of immersion with the clean cup that paper delivers.

It has the gentlest learning curve in filter coffee: no pour to train, no flow to manage. Pour, wait, set it down.

Grind, ratio and temperature

Medium grind, a ratio around 1:16.7 and water between 92 and 95°C. Because immersion is self-limiting, grind matters less than in percolation methods — but too fine still takes its toll at drawdown, which turns slow and muddy. Steep time is the main lever: more time, more extraction.

Which recipe to pick

The Standard Clever is the entry point: one pour, a 3-minute steep, drawdown — done. The Hoffmann Clever flips the classic order (water before coffee, so everything saturates at once) and stretches the steep with a controlled drawdown, pulling more sweetness from a bigger dose.

Common mistakes

Opening the valve too early and serving under-extracted coffee; grinding too fine and stalling the final drawdown; skipping the dripper preheat, which steals temperature from the whole steep; and not stirring (or swirling) after the pour, leaving dry coffee floating in the crust.
