How espresso works
Espresso is the only method here where water is pushed rather than pulled. A pump forces water at ~9 bar through a compacted puck of finely ground coffee, and what comes out in 25 to 30 seconds is a drink with 8 to 12% dissolved solids — ten times the strength of a pour-over.
That changes the whole yardstick: you do not measure water going in, you measure beverage coming out, in grams on the scale. A recipe is a dose-to-yield ratio — 18 g of coffee for 36 g in the cup is the classic 1:2. That is why the slider on this page reads grams, not millilitres: crema lies about volume, the scale does not.
Dose, yield and time
Lock the dose first — it is set by the portafilter basket, not by preference: an 18 g basket wants 18 g. Then pick the yield: 1:2 is the balanced starting point, 1:1.5 (ristretto) concentrates body and sweetness, 1:3 (lungo) stretches and lightens it. Water between 92 and 94°C; light roasts want the top of that range.
With dose and yield locked, grind is the only lever. A fast, sour shot wants a finer grind; a slow, bitter one wants coarser. Change the grind, not the clock — time is an outcome, not a parameter. One notch on the grinder usually moves the shot by 2 to 4 seconds.
Which recipe to pick
The Classic Espresso (1:2) is the reference shot and the right place to start dialling in any new coffee. The Ristretto (1:1.5) cuts the yield for a denser, sweeter cup — great on medium and dark roasts and in milk drinks. The Lungo (1:3) stretches the extraction and reveals acidity and florals that 1:2 compresses. And the Turbo Shot (Hedrick) inverts the logic: coarser grind, lower pressure (~6 bar) and 1:3 in 20 seconds — built for light roasts that turn astringent in a traditional shot.
Common mistakes
Grinding at a filter setting — espresso needs a grinder that reaches the fine range evenly, and most pour-over grinders do not get there; distributing badly and letting water carve a path through the puck (channeling), which is the number one defect and is fixed with WDT before tamping, not with a harder tamp; tamping off-level, which channels at the edge; chasing 25 seconds by changing the dose instead of the grind; and reading the shot by cup volume instead of weight — crema can account for a third of the apparent volume and collapses within a minute.
